Starch gelatinization. Raw starch does not dissolve in cold water. When heated with water, the starch grains expand. With the increase of temperature, the molecular structure gradually becomes unstable, and the molecular structure disintegrates due to hydrogen bond breaking. This process is called starch gelatinization. The essence of starch gelatinization is that the water enters into the microcrystalline bundle structure and breaks up the association state between starch molecules. Starch molecules or their aggregates are highly hydrated to form colloidal system. The gelatinization of starch can be divided into three stages: A. reversible water absorption stage. When the water enters the amorphous part of the starch granule, the volume expands slightly, then it can be recovered after cooling and drying, and the birefringence remains unchanged; B. irreversible water absorption stage. With the increase of temperature, water enters into the interstice of starch microcrystals, and a large amount of water is absorbed irreversibly, and the crystallization "dissolves"; C. in the disintegration stage of starch granules, all starch molecules enter the solution.
