寿光的传统美食“耙谷”

耙谷是一道由粮食加蔬菜制成的菜肴,是寿光的传统美食, 据考证已有几的历史了,它是勤劳智慧的寿光人在长期的生活中创造出来的。寿光人喜欢吃耙谷,而且每家每户都会做耙谷。以前每到春节,家家户户都做耙谷,以备过年待客所用,现在生活条件好了,有制作耙谷的大户,一年四季,不管在大小集市或是在各个超市都能买到,而且在寿光的各个宾馆饭店都能吃到这一地道的传统美食。
制作耙谷的原料主要是绿豆和菠菜。绿豆性凉味甘,有清热、止渴消暑、润肤的功效,还有一定的祛铅毒功效,绿豆粉因其含有大量蛋白质、B族维生素以及钙、磷、铁等矿物质,故有增白、淡化斑点、清洁肌肤、去除角质、抑制青春痘等功效。绿豆还具有抗菌的作用,而菠菜有“营养生”之称,它富含类胡萝卜素、维生素C、维生素K、矿物质(钙质、铁质等)、辅酶Q10等多种营养素。把这两种东西合理搭配,就成了一种味道鲜美、外形美观、营养丰富,并能防病治病的美食。
制作耙谷并不复杂,,精选绿豆和露天栽培的菠菜。先把绿豆中的砂石杂物筛选出来,洗净后将绿豆浸泡在40度的温水中,一般侵泡6个小时左右,把选好的新鲜菠菜洗净,切成碎末,将二者按10:4的比例掺和均匀,然后加适量的水,用石磨磨碎制浆,再把磨好的浆用勺子盛到铺好笼布的笼屉上,把笼屉放到已烧开水的锅上,用小火蒸十几分钟即可。此时掌握好火候很重要,靠鼻闻、手摸、观颜色来掌握。蒸的时间短了,杷谷不熟,蒸的时间太长,杷谷就会发黑、变味,好的耙谷应是鲜绿色,口感清香。趁热将蒸熟的杷谷浆团成大小均匀的球状,就算大功告成了。新做成的耙谷外紧里松 ,美观味美。
做成的耙谷还不能马上吃,还要经过加盐加佐料进行烹炒才好吃。吃法很多,但常见的是猪肉炒扒谷 ,方法是:用猪油加佐料炒锅后,加适量清水,再将扒谷捻碎放入锅内 ,再放上粉条,等水分蒸发后,加入韭菜拌匀,就可以出锅了。 这时做好的耙谷松软鲜香、回味悠长。
寿光的耙谷历经而不衰, 祖祖辈辈百吃不厌,天南地北的寿光人无论走到哪里,都不会忘记家乡传统美味。逢年过节人们千里迢迢回到家乡,在家人团聚,朋友聚会的餐桌上,耙谷是一道菜肴
